something but we didn’t have the sophistication to realize. Now, 100 years later saying wait a minute they were not basically all off target completely.
Because they didn’t have the tools the tools but they have the right insight. See there’s
something quote vital sources, now we call them omega 3 fatty acids and we call them polyphenols. We sounds like we’re more intelligent. But these are vital agents we have to
have. Its been evolving for hundreds of millions of years. And without adequate diet we let ourselves open to basically increased inflammation and that’s what makes us fat makes us sick and makes us age faster Well with your book Dr. Barry Sears,
The Mediterranean Zone, what is your mission? What is the main message you want to get
out to the public? You can change your life – you can It’s not that hard, but you need to have
knowledge. Without knowledge and without measurements you’re basically revelous on the sea of life. You end up going around and
around and around and looking for bogey men. You see lots of bogey men today. We see other now new heroes saturated fats. I said whoa, whoa, doesn’t anyone read the literature? You know again there’s a much more some
simple aspect. We’re looking for a bogey man What we need is orchestration. An
orchestration based on our best knowledge of how nutrients affect gene expression So hopefully with the book The Mediterranean Zone, I give more insight into what you’re looking for and why,
at how easy is it to follow. And if you follow the very simple
prescriptions I put in my book Which there are only 3. One, you need one hand one eye, and one watch. Now here is basically how you control inflammation for a lifetime. Regardless of your dietary philosophy. At each meal you divide you plate into three equal sections On one third the we put some protein That will be determined by your dietary philosophy. – That
could be sweet potatoes and black beans that could be fish- But again,
rich in proteins the sweet potatoes and the black beans are not going to be rich in that. They carry a lot of carbohydrates. But find out something that is protein rich that fits your philosophy The other 2/3 of the plate, you fill it full of
colorful carbohydrates called fruits and vegetables Then you add a dash of fat. What’s a dash?A small amount. Just make sure it’s mono-unsaturated fat
things like olive oil and guacamole Now, why do you need the watch? If you balance your plate correctly, for the next five hours you will not be hungry. Because you’re maintaining blood sugar levels It seems easy enough. The trick is doing the
best you can every meal, the rest of your life. Excellent. Well, Dr. Barry Sears, you’ve left our audience with some concepts that are easy to follow that
they can replicate, maybe do on a daily basis Because really we know the compliance
really makes or breaks whether a person is gonna succeed It’s everything. And that’s why we’ve
been, when we hear people say take this program, diet and exercise is
not enough. Diet and exercise are always enough if
you do with the correct way Right. And again, you know we’ve said it for many years yes diet is important but so is exercise.Right. You can’t just take one without the other. See, and at the last thing, which most will never
do, stress reduction the hardest thing Diets hard, exercise again is a little
harder, but the hardest is find a comfortable chair every day and sit in it for 20 minutes and try to think of nothing. That’s hard work You know these are the verities of the ages. They haven’t changed. We understand now how they affect
our communication and that’s the exciting part But the future remains then you know for

least they can focus on their best intentions, what they’re going to do
in their life well. And again, that’s one of the things we
have-we need at times peace and reflection. Yes. And again
I said the ancients knew this- you need to take time to
reflect and basically consolidate information. And
what meditation does it allows you to build the mind like a
muscle You realize that everything you do
or don’t will be a consequence. So if you make a dietary mistake, its fine. As long as you know what the consequences are. So I don’t go through life being mindless. You have to basically have a structured dietary program with a structured exercise program.
These things we have to do on a daily basis, if you want to live longer better, think that there is some new breakthrough brewing in a laboratory is a total pipe dream. Let’s address some issues about thyroid
dysfunction, adrenal distress, liver dysfunction.
What’s going on with these organs that we have such a wide degree of deficiencies of thyroid or adrenal function or cortisol, iodine and so forth. What is your
opinion about that? Inflammation. When you deal with the hormonal systems these are very tightly orchestrated. You
know the relationship between normal and the easiest way to develop hormone
resistance is increased inflammation. We talk about
this resistance you lifted resistance, we also have a
lot of other resistance just because now the streaming pathways are now compromised by increased
inflammation. And so much things we say we need this…maybe we have something more comprehensive missing. If we can
reduce the inflammation systemically in the body, then all of a sudden our communication
systems our hormones begin to work more effectively. Now this doesn’t mean there is not a new
form of hormone replacement, but it says the more I can control the inflammation by my diet,
the less of the hormone I need to basically
rectify the system And in endocrinology standard practice start low, go slow. What you see now, is that people say start high and back off. This makes
no sense start with getting a stable baseline in the diet and then slowly add the hormone you think- you’ve done the best
you can with diet and exercise to rectify the signaling
transmission and then slowly add increasing amounts and carefully evaluate how you’re doing. So when you talk about endocrinology intervention you’re suggesting very low dosage is
appropriate to the individual symptoms and their condition and then monitoring them, retesting- and
what is the importance of testing and monitoring for these people? Well if you
don’t test you don’t monitor and you can’t manage and you know hormones are more times more
powerful drugs So you want to treat them with respect. But if
you’re not following anti-inflammatory diet, you’re spitting in the wind and asking for probably more problems than benefits you’ll gain. So Doctor Sears, in order of importance
to get the polyphenols to get the most effective Omega’s are you mention
spices. Is there anything else higher in foods than spices? And what specific spices or
what other froods? Well the highest is actually chocolate Not the chocolate bars. They’re all diluted with you know sugar and fat. But
unsweetened baker’s chocolate I said great, I can deal with that. One
problem- it’s contaminated with cadmium. So because of the very narrow
geographic band were coco is grown, it is also very rich in cadmium. So we have a few problems. So now that is why we go to polyphenol extracts Recent article just published inNnature
last week show that you have a a very large amount of close to about 1/2 grams of coco polyphenol extracts. You saw it 25
percent increase in cognitive skills. I said I want to see my brain increase by 25%, but you have to be to be a coco extracts, which at those high levels, must be pure. And therefore, this is the challenge: we have
the knowledge and we have the tools the questions is do we have the will as physicians
and as patients to follow those rules Cacao – is carob different? Yes. So if you were to have the right
concentration what other spices do you like? I like
them all because again remember we have some 8000 polyphenols, and as smart as I might be, I’m not that smart. So I throw in a lot of spices on my food because why? I’m covering my back.
That said, the more spices and that is in one of the most concentrated formats, the more spices I have the the greater the spectrum of polyphenols I’ll be getting. And then the same the other foods I like fruits and vegetables- but primary not
starchy vegetables it’s hard to over consume. It is easy to
overcome fruits They’re tasty, they’re rich in sugar, that’s why they’re easy to over consume. But the data on blueberries is very attractive in terms of mental cognition, in terms of
reducing oxidative stress. So I think now we get
the extracts with the ability to reduce oxidative stress and
basically improve mental cognition increases. So again, there is a calling, a need for polyphenol extracts. But you still need to have a baseline diet rich in a wide variety of polyphenols to cover you bets. Oxidative stress, a lipid peroxidase. Are there certain
tests that can be done to to measure the levels of oxidative
stress? The best part is there are two markers of oxidative stress. One is called isoprostanes. It is actually an oxidation product of arachidonic acid. The second which is
actually more germane is reduction up oxidized LDL particles LDL particles are the root cause
of heart disease. Oxidized LDL particles are true culprit And you can now measure, and it is a
non-standard test, but again is available at certain laboratories. It can measure
levels, and therefore the reduction of those oxidized LDL particles as you consume more polyphenols. Excellent. IS there anything else that you like our
audience to know, that’s important for them to see the future of where you think healthy
medicine will go? I think the future is go you’ll go back
to the future You know, I said hippocrates said it perfectly:let food be your medicine, let medicine be your food. We’ve gotten away from that and now we’re paying the price. I said this will be multi-generational way back because of the epigenetic marks we have left. It will be a challenge for this
generation the next generation and the generation after. If we’re up to the challenge we can return
to basically the land of milk and honey. Oops! Two of the bad one! But again its saying that there is no
individual bogey man. We have gone further and further away from orchestration. Orchestration
of food to basically control and manage these
powerful communication systems within our body.
And the more we understand we go back to first principles. In their eyes,
are our future medicine lies not in the pharmacy, but in the kitchen.
